Roasted Brussels Sprouts

Ingredients
- 2 dozen Brussels sprouts
- 3 shallots
- 3 tablespoons olive oil
- 1 tsp. thyme
- Ground black pepper
- Kosher salt (optional)
Instructions
- Heat oven to 400° F.
- Peel shallots and slice into rings. Place in a medium bowl.
- Remove outer leaves from Brussels sprouts and trim the base slightly (don't cut the stems too high or all of the leaves will fall off). Cut the sprouts in half, lengthwise. Add to bowl with shallots.
- Add olive oil, thyme, and pepper to bowl and mix to coat the shallots and Brussels sprouts. Spread out on a baking sheet so that the vegetables are not touching too much. Place in oven to roast for 35-45 minutes, tossing every 12 minutes, until lightly browned (sprouts should be tender).
- Sprinkle lightly with salt (optional).
Additional notes
Instead of shallots, you can also use a small red onion.
