Lemon Garlic Pasta

Ingredients

  • 1 pound pasta
  • 3 cloves fresh garlic, peeled and minced (or you can just used the
  • jarred kind, but I like fresh, tends to be less pungent)
  • 1 lemon, juiced
  • 3-4 tbsp chicken broth
  • 2-3 tbsp olive oil (You can add more of the chicken broth or the olive
  • oil to make a consistency that you are happy with)
  • 3/4 cup parm cheese
  • 1/4 tsp pepper

Instructions

  1. Cook pasta according to directions, drain.
  2. In a large skillet, heat up olive oil over medium-high heat. Add
  3. garlic and cook til golden (about 3 mins).
  4. Turn heat down to medium/medium low. Add chicken broth, pepper, and
  5. juice of the lemon. Heat through.
  6. Add mixture to cooked pasta, heat through. At this point, you can tell if you'll need more chicken broth and/or olive oil. Add in as much as you need.
  7. Add Parmesan cheese and serve. If you want more color to the dish, you can add 1tbsp of parsley at this point.

Additional notes

Also, you can easily incorporate broccoli into this dish. Right before the pasta is ready to be drained (about 2 minutes more to cook) add some frozen brocoli to the pot. Drain with the pasta.
