Christmas Chocoloate Cake

Ingredients

  • Cake:
  • 6 oz package of chocolate chips (1 cup)
  • 2 1/4 cups sifted flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup butter
  • 1 1/3 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 1 cup buttermilk
  • Frosting:
  • 6 oz package of chocolate chips (1 cup)
  • 2 cups whipping cream

Instructions

  1. Cake:
  2. Heat a double boiler over hot water. Stir in chocolate pieces with 1/4 cup water until melted and blended. Remove from heat.
  3. Preheat oven to 375
  4. Grease and flour 3 cake pans
  5. Sift flour with baking soda and salt.
  6. In a large bowl at medium speed beat butter with sugar and vanilla until light and fluffy.
  7. Beat in eggs one at a time.
  8. Beat in melted chocolate.
  9. With mixer at low speed alternate adding flour mixture and buttermilk to the butter mixture, beating after each addition until smooth.
  10. Divide batter and bake 25 minutes or until done. Cool in pan 2 minutes.
  11. Frosting:
  12. Heat a double boiler over hot water. Stir in chocolate pieces with 2 tbsp water until melted and blended. Remove from heat. Let it reach room temperature.
  13. Beat whipping cream until it folds. Add in blended chocolate. Coat cake.
