Christmas Chocoloate Cake

Ingredients
- Cake:
- 6 oz package of chocolate chips (1 cup)
- 2 1/4 cups sifted flour
- 1 tsp baking soda
- 3/4 tsp salt
- 3/4 cup butter
- 1 1/3 cup sugar
- 1 tsp vanilla
- 3 eggs
- 1 cup buttermilk
- Frosting:
- 6 oz package of chocolate chips (1 cup)
- 2 cups whipping cream
Instructions
- Cake:
- Heat a double boiler over hot water. Stir in chocolate pieces with 1/4 cup water until melted and blended. Remove from heat.
- Preheat oven to 375
- Grease and flour 3 cake pans
- Sift flour with baking soda and salt.
- In a large bowl at medium speed beat butter with sugar and vanilla until light and fluffy.
- Beat in eggs one at a time.
- Beat in melted chocolate.
- With mixer at low speed alternate adding flour mixture and buttermilk to the butter mixture, beating after each addition until smooth.
- Divide batter and bake 25 minutes or until done. Cool in pan 2 minutes.
- Frosting:
- Heat a double boiler over hot water. Stir in chocolate pieces with 2 tbsp water until melted and blended. Remove from heat. Let it reach room temperature.
- Beat whipping cream until it folds. Add in blended chocolate. Coat cake.
