Broiled Trout with Almonds
Makes 2 servings
Ingredients
- 2 rainbow trout, butterfly filleted
- 1 tsp. butter
- 2 Tbsp. almonds, sliced
- 1 Lemon (for 1 tsp. zest and 2 wedges for serving)
- Salt
- Black pepper
Instructions
- Preheat the broiler.
- Rinse trout and pat dry. Open fish and place skin-side down on a foil-lined broiler pan. Season with salt and pepper and zest from one lemon (about 1/2 tsp. zest per fish). Dot with butter and sprinkle with almonds.
- Broil for about five minutes, until flesh is opaque and flakes easily with a fork.
- Serve immediately with lemon wedges.
