Bisquick Coffee Cake

An easy coffee cake recipe with only a few ingredients that could be thrown together while on vacation.
Total time: 45 minutes
Ingredients
Cake
- 2 cups Bisquick Original baking mix
- 2/3 cup milk
- 2 Tbsp granulated sugar
- 1 egg
Cinnamon Streusel
- 1/3 cup Bisquick Original baking mix
- 1/3 cup packed brown sugar
- 1/2 tsp ground cinnamon
- 2 Tbsp firm margarine or butter
Instructions
- Preheat oven to 375°F.
- Grease a 9" round or 8" square baking dish.
- In a large bowl, stir together all of the cake ingredients and blend well.
- In a separate bowl, mix cinnamon streusel ingredients. Add 1/4 of the streusel to the batter and fold in.
- Spread batter into baking dish and sprinkle rest of streusel over top of the batter.
- Bake 20 minutes until golden brown. A toothpick should come out of the cake clean. Allow to cool in the pan.
Additional notes
Try mixing in 1 cup of fresh or frozen blueberries into the batter before baking.
